A new year

Did you watch Downton last night? We have all been counting down the days. Norah made a chocolate cake with cream cheese icing just for the occasion.

Christmas is still lingering on a bit here. The tree is still up and the holiday music remains on shuffle. As my mom would say “Christmas is not over until the Epiphany!”

But I do love the start of a new year. A fresh, crisp new calendar. A list of goals and aspirations. Re-organizing and re-arranging. And a sense of calm as the holiday hustle comes to a close.

Let’s start with cake…

We usually drag birthdays out as long as possible around here. The day you were born is an important day to celebrate so why not do it over several days or even a week!

Although Hannah doesn’t turn 12 until Tuesday, we began the festivities with a birthday cake with friends last night. I made this cake and it was to die for!
I am usually a chocolate cake with buttercream or cream cheese icing kind of gal but this cake spoke to me when I read the icing was made with sour cream and bittersweet chocolate.
The tangy to sweet ratio was perfect! Warning: make enough icing to ice your cake and eat it too. It was hard to stop tasting!

When I came home from the store to unpack the cake ingredients I was disappointed to find that I had overlooked the bittersweet chocolate I had bought contained almonds. Chris was nice enough to run back out for me. He couldn’t find plain bittersweet but did come home with both dark chocolate and milk chocolate. He thought combined it would do the job. And he was right. It was perfect.

And there is still cake left over. Cake counts as breakfast right?

when i was a farm apprentice many moons ago i worked with someone who had previously worked as a baker.
throughout the season we would bake all sorts of things together including all of the recipes from his bakery.
i left that year with a stack of papers with those recipes doodled all over them and somehow they got lost in the shuffle.

a few years ago i unearthed those recipes and neatly wrote them all down.
when i stumbled upon the poppy seed cake, i made it right away.
i love how simple it is and it is so deliciously moist.

i made this cake in the spring for one of our potluck lunches at the farm.
the farmers loved it and now request it for all birthday celebrations.
yesterday i made it for sebastian who told me it reminds him of a poppy seed cake he grew up eating in germany.

poppy seed cake

3 cups flour
1 1/2 teaspoon baking soda
2 cups sugar
1 cup oil (i use canola or coconut)
4 eggs
1 1/2 cups cream
1 teaspoon vanilla
1 cup poppy seeds
1 cup sliced almonds

Mix wet with dry and pour into greased and floured bundt pan. bake 50 minutes. sprinkle with confectioners sugar.
